It seems like any wired controller that you have can be used with a PS2 - USB dongle. Maybe have to use XPadder to set the keys but other then that, you should be good to go.
I read something about wireless and bluetooth receivers, but that was for a wii guitar, so yeah, not as up on it.

im pretty sure the RB PS2 controllers are already USB (they are compatable with the PS2 and PS3). you can download GlovePIE and get the scripts somewhere here.

My Wii RB guitar "just works." I plug in the dongle, and it gets recognized as what it is.
I didn't try using it in FoF, but I doubt that setting it up would be any more difficult than getting my wired PS2 GH controller to work via a USB converter and configuring Xpadder to bind the buttons to the default FoF keyboard layout.
